The first “meal” you’re allowed to cook as a kid, toast comforts the sick, revives the hungover, attends to the weary. It is a quintessential part of Irish culture... just make sure you butter it properly.

One of my favourite memories is from when I used to stay with my nana, Róise, as a little girl and she would make toast by piercing a slice of white batch bread with a long fork and holding it to the open fire to scorch it on one side, leaving the other side soft.
