On Thursday, July 10, the sleek surrounds of Anantara The Marker Dublin Hotel will play host to a Champagne-soaked summer evening in partnership with Findlater & Co., celebrating the craftsmanship and character of one of the world’s most beloved Champagne houses: Bollinger.
The evening begins in the heights of Dublin city, with a rooftop reception timed to catch golden hour. With glasses of Bollinger Special Cuvée in hand, guests will take in the views before moving to Forbes Street by Gareth Mullins, where a five-course tasting menu awaits guests with each dish created to complement the elegance and complexity of the Champagne being poured.
This is not your average dinner. No, this is an invitation to savour exceptional food with perfectly paired bubbles and experience a rare sense of occasion that comes with drinking Champagne for no other reason than to celebrate being present.
Executive Chef Gareth Mullins will present a tasting menu that reads like a love letter to Irish summer produce. Starting with confit leek layered with vanilla, truffle and a silken vichyssoise, followed by hamachi paired with fennel, squash purée and grapefruit, the dishes are carefully calibrated to bring out the best in each glass. The centrepiece of the evening is a luxurious surf and turf, a meltingly tender beef fillet with scallop, laksa and yuzu, before dessert arrives as a vibrant celebration of the season: Wexford strawberries with hibiscus, forest berry jelly, meringue and a refreshing Bollinger Rosé granita.
Throughout the evening, guests will be guided through each pairing by Eva Gottesman, International Business Manager for Bollinger, who will share insights, stories and a little of the magic that makes Bollinger so enduringly iconic.
