What to Make: Grilled King Oyster Mushrooms

Grilled King Oyster Mushrooms in a Balsamic Vinegar and Thyme Marinade

Deliciously marinated, juicy mushrooms cooked on the barbecue are an amazing explosion of flavour.

Makes 4 skewers
Barbecuing time: 16 minutes
Preparation time: 5 minutes + 30 minutes

Ingredients
250g king oyster mushrooms
3 cloves garlic
4 tbsp balsamic vinegar
4 tbsp olive oil
1 tbsp fresh thyme
? tsp salt

Method
Clean the mushrooms and halve them lengthways.

For the marinade, finely chop or crush the garlic and mix with the remaining ingredients until smooth.

Add the mushrooms to the marinade, stir well and leave for at least 30 minutes in the refrigerator.

Thread the mushrooms onto bamboo skewers that have been well soaked in water. Cook over indirect heat for 8 minutes each side.
