Dublin’s new five-star cocktail menu is like summer in a glass

We may no longer be in the midst of a heatwave, but the summer is far from over. We refuse to hang up our sun hats and dresses just yet; and what’s more, we’re indulging in the finest of summer flavours while we still can. Lucky for us, the five-star Dylan hotel at Eastmoreland Place, Dublin 4 has debuted its seasonal summertime menu.

Nestled in the heart of Dublin’s most sophisticated quarter, the boutique hotel has a knack for indulgence. Whether you need a break from shopping on Grafton Street or you’re post-walk in Stephen’s Green, sit back and relax in the sensual (bordering on decadent) Dylan bar. Or, step outside to the flower-adorned terrace with your closest friends to celebrate the long summer days and nights. Aptly named Midsummer Dreams, the new menu has been created by an expert team of onsite chefs and mixologists. The cocktails alone feature flavours synonymous with summer; including honeysuckle, elderflower, hibiscus and more. Throw in bespoke, savoury canapés with garden peas, lobster and lavender; and it’s an ideal choice for evening refreshments. Blooming Chamomile

A flower based cocktail featuring Bloom Gin and the soothing summer flavour of chamomile. Ingredients include Bloom Gin, elderflower liqueur, chamomile tea, lemon juice, yoghurt, egg white and chamomile blossoms.

Pisco Flower

A floral twist on the classic Pisco Sour using Crème de Violette and a touch of elderflower. Ingredients include Pisco, Crème de Violette, elderflower liqueur, lemon juice, simple syrup, bitters and egg white and violet petal.

Tequila Honeybee

A summertime take on the Honeybee cocktail using tequila in place of rum. It’s light and sweet. Ingredients include Reposado Tequila, honey water, lemon juice and bitters.

Pimmsical

A fittingly whimsical name for the refreshing and timeless Pimms Cup and Lemonade cocktail. Ingredients include Pimms, lemon soda, orange and lemon slices and peppermint to garnish.

Heavenly Hibiscus

An elegant and sophisticated cocktail with a pretty Hibiscus twist. Ingredients include Hibiscus syrup, Lillet White, Riesling and soda water.

Absinthe Honeysuckle

A reimagining of the classic cocktail; pairing the aniseed flavour of absinthe with the sweetness of honey. Ingredients include rum, absinthe, honey syrup, lime juice, and honeysuckle to garnish.

  • Goats cheese with figs on brioche
  • Foie Gras, sable with lavender and strawberry geleé
  • Crispy Hen’s Egg
  • Crab, lettuce and tomato cold consommé

  • Lime Parfait
  • Crispy Apple
