Inspired by the flavours of Shanghai, experience this cocktail from the comfort of your own home.

Making cocktails at home is a fun way to experiment with different flavours, whether you’re inviting friends over, or you simply want a tipple at the end of a long week.

We asked world-class Irish mixologist and Diageo Head of Advocacy, Cal Byrne, for his expert recommendations, and his latest one is perfect for those who love something a little different.

This Green Tea Punch has the familiar flavours of Tanqueray Gin, but with Chinese-inspired notes including green tea, sake, and lemongrass to take you on a real journey.

“Inspired by my recent trip to Shanghai, understated elegance is at the heart of their fashion and cocktails,” Cal explains.

“Using a simple technique known as ‘milk washing’, this drink is clarified, allowing the complexity of its composition to sit under the guise of a simple and clean aesthetic. This technique is used in some of the world’s best cocktail bars.”

To pair with this drink’s Asian influence, Cal has put together a look that’s also inspired by his travels. He’s wearing a piece by a Shanghai designer that’s equally focused on understated elegance, with its low-key colour yet striking silhouette.

Green Tea Punch

To make: 

  • 150ml Tanqueray Gin
  • 500ml brewed yuzu green tea
  • 100ml cloudy apple juice
  • 100ml Umeshu sake
  • Lemongrass, to garnish
  • Clarified milk

 

Method

1. To the cooled green tea, add the apple juice, sake and Tanqueray.

2. To clarify milk, slightly warm 12% of the weight of the total batch in milk, and slowly pour it into the cocktail whilst stirring constantly. The curd and whey of the milk will split.

3. Pour this mix through a fine sieve.

4. Store in a nice bottle, serve with a split sprig of lemongrass and enjoy over ice. This batch cocktail can be kept in the fridge for up to three months.
