Highlights from IMAGE Cocktail Club: An Evening of Mixology and Music
Held in the beautifully appointed Collins Club at The Leinster, the IMAGE Cocktail Club was an unforgettable evening of mixology, music and celebration.
Festive flavours and seasonal sparkle were in full swing at the IMAGE Cocktail Club, where guests gathered for an unforgettable evening of mixology, music and celebration.
Held in the beautifully appointed Collins Club at The Leinster, the setting provided the perfect backdrop for a night dedicated to craftsmanship and conviviality.
Upon arrival, attendees were welcomed with a Winter Paloma – a refreshing yet warming seasonal serve courtesy of Casamigos Tequila. Glasses in hand, guests mingled and settled into the venue as the charismatic jazz trio Trio Royale set the tone with festive favourites and smooth classics. Their live soundtrack created a relaxed, elegant atmosphere while canapés circulated throughout the room.

The heart of the evening unfolded as Diageo global spirits ambassador Will Lynch took to the bar alongside IMAGE contributing editor Édaein O’Connell to guide guests through a series of cocktail demonstrations. Will’s expert insights, approachable teaching style, and playful anecdotes gave attendees a behind-the-scenes look at the art of building beautifully balanced drinks. From technique to flavour pairings, the demos offered a masterclass in elevating the at-home cocktail experience.
As the night continued, guests were treated to two signature serves that showcased the breadth of Diageo’s spirits portfolio. First was a Roe & Co Irish Whiskey Sour, which was velvety, zesty and perfectly crafted. For those opting for a non-alcoholic alternative, a crisp and vibrant Tom Collins, courtesy of Tanqueray, offered all the refreshment without the proof.
The evening closed on a high note, with guests leaving inspired, informed, and ready to shake up their own seasonal cocktails at home.
