Dairy Free Bircher Muesli

Dairy Free Bircher Muesli

Oh my god this is good. It’s like a hybrid between porridge and granola, but better. I know bircher muesli is usually made with yoghurt and some sort of fruit juice but I wanted to make a dairy free version so I’ve gone with my beloved almond milk. You can add in other seeds, nuts, dried fruit etc too but this combination is gorgeous and goes perfectly with all kinds of fruit and berries, so you can top it with something different each morning.

Makes 6 Servings

Ingredients

1 Cup of Gluten Free Oats

1/2 Cup of Desiccated Coconut

1/2 Cup of Flaked Almonds

1 Heaped Tablespoon of Chia Seeds

1 Apple

2 Tablespoons of Agave/Honey

1 & 1/2 Cups of Almond Milk, Unsweetened

Method

Step 1:?Add the oats, coconut, flaked almonds and chia seeds to a large bowl and then grate in the apple.

Step 2:?Mix it all together.

Step 3:?Add in your sweetener and almond milk and mix again.

Step 4:?Cover the bowl or add to a large jar and pop it in the fridge overnight (or minimum 2 hours).

Step 5:?Serve as is or with a dash more almond milk and whatever toppings you like. I went for banana, almonds and bee pollen.
