The Image Interiors & Living team visited Dublin’s  The Woollen Mills and took in gorgeous Ha’Penny Bridge views to sip on one of their delicious gin, nettle and thyme cocktails and we couldn’t resist begging their booze specialist Sean Garango for this thyme-tastic tipple. “It’s’our take on the classic American Tom Collins but with a craft twist,” Sean explains. “We make our own nettle and thyme syrup – our recipe is a secret! But you can make your own version with nettle tea, thyme and a basic sugar syrup.”

YOU’LL NEED

35ml Blackdown Sussex Dry Gin (available from select off-licences. Try Jus de VineBlackrock Cellar and Redmonds of Ranelagh – or, alternatively, just use your favourite gin)

35ml nettle syrup

35 ml freshly squeezed lemon juice

Soda water to top up

HOW TO

Mix the gin, syrup and lemon juice. Shake over ice. Top up with soda, a lemon wedge and a sprig of thyme. Enjoy!
