Cookie Dough Bites

Most people would agree that half the pleasure in making cookies is getting to eat the dough and these cookie dough bites are a delicious dessert in their own right! Whip them up in just a few minutes and you’ve got a delectable, healthy treat everyone will love!

Ingredients (Makes 8-10)

1 Cup of Cashews

1 Tablespoon of Coconut Oil,

Melted
1 Tablespoon of Agave
Pinch of Coarse Salt
75g Dark Chocolate

Method

Step 1: Dry roast the cashews at 220’C for about 3 minutes until nice and golden. Add them to the food processor and blitz until they’re as fine as your food processor will get them!

Step 2: Add in the melted coconut oil, agave and salt and blend until combined.

Step 3: Use your hands to press and roll the mixture into little balls. It might feel a little too crumbly but just squeeze it tightly as you roll it into each ball!

Step 4: Melt your chocolate and dip each ball into it to coat. Set the on some parchment paper and pop them in the fridge to set. When the chocolate is hard pop one in your mouth and enjoy!
