Why were we there?

The evening started on The Rooftop with canapés and aperitif followed by a 5-course tasting menu paired with Bollinger in the exciting new destination restaurant Forbes Street by Gareth Mullins.

For over 20 years, Gareth has delighted patrons of five-star hotels in Ireland and Australia with some extraordinary culinary achievements.

Gareth was appointed executive chef at The Marker Hotel when it opened in 2013 and for the last decade has been responsible for some truly brilliant creations coming out of The Marker Hotel’s four kitchens: The Brasserie, the Rooftop Bar and Terrace, the Marker Bar and in-room dining.

Behind the Executive Chef is a man that loves Dublin and the people in this city. “I’m a big supporter of the craft producers all over the country too, their enthusiasm inspires me”.

In the words of Madame Lily Bollinger…

“I drink it when I’m happy and when I’m sad. Sometimes I drink it when I’m alone. When I have company I consider it obligatory. I trifle with it if I’m not hungry and drink it when I am.”
