Sponge cake and strawberry daiquiris: 7 summer recipes trending on Google right now

Cakes and cocktails are #trending right now; here are our favourite recipes to try this weekend

Whether you’re looking for the perfect summer cocktail or best homemade cake, these recipes are all the rage right now.

The most searched for recipes include aperol spritz, strawberry daiquiris, Victoria sponge cakes and tasty omelettes.

So, look no further, for we have rounded up our seven favourite, trending recipes for you to try at home.

Mary Berry’s Victoria sponge cake

There’s nothing quite like homemade sponge cake with fresh jam and buttercream, and who knows it better than Mary Berry herself? Her recipe is surprisingly simple, with ingredients that are probably in your press already—eggs, sugar, flour, baking powder, butter, milk and raspberries. (The Great British Bake Off)

The Happy Pear’s elderflower cordial

Beloved cooking duo, Stephen and David Flynn, share their secret to the best elderflower cordial recipe—no preservatives. Usually the cocktail has citric acid, but this recipe does without, choosing fresh ingredients like orange, lemon and honey with a zingy twist of ginger. (The Happy Pear)

Summer berry pavlova

This light and airy dessert is the perfect treat on a warm day. A layering of meringue, whipped cream and berries, it’s a cinch to make with an electric mixer on hand. Jamie Oliver’s expert rendition adds a bit of vanilla and is topped off with fruit and mint sprigs. (Jamie Oliver)

Coffee and walnut cake

Made with real coffee and mascarpone filling, this cake is a true crowd pleaser. Simply make a traditional sponge with added black coffee and finely chopped walnuts, and for the filling, mix together icing sugar, double cream and mascarpone. Then top with roughly chopped walnuts and dust with icing sugar for the finished look. (BBC GoodFood

Frozen strawberry daiquiris

These delicious, frozen daiquiris are made with just three ingredients: strawberries, lime juice and rum. The key is to use a combination of frozen and fresh strawberries, so that the drinks are cold without being watered down from ice. Garnish with one strawberry and lime wedge for a fancy finish. (Delish)

Pesto & roasted tomato omelette and bacon & brie omelette

Looking for a way to change up your usual, plain Jane omelette? Try adding a layer of your favourite pesto and roasted tomatoes, following this dairy-free recipe (Edible Perspective). Or, if you are looking for something different, indulge in a bacon and brie omelette with smoked lardons and chives. This tasty recipe serves omelette wedges alongside a summer salad (BBC GoodFood)

Rosé Aperol Spritz

The traditional aperol spritz, with just prosecco, aperol and soda water, can be a bit drab. This fruity version is made with passion fruit and lime juice and uses sparkling rosé instead of prosecco. It’s refreshing, hydrating and packs a punch. We recommend sipping from a martini glass while soaking up some sun. (Bon Appetit)
