Cookbook author and all-round sounder Roz has teamed up with innocent to crown the first ever Dairy Free Cook-Off Champion, who will receive an all-expenses paid trip to the prestigious Ballymaloe Cookery School.

We met up with Roz, who has just released her No Fuss Vegan cookbook, to give you some pointers on how to stand out, and what kinds of dairy-free recipes leave her wanting more.
“I’ve made some really tasty savoury meals using the innocent dairy-free range, like a sweet potato coconut curry and a veggie pasta bake that’s so so creamy – both are perfect dishes for your prep,” Roz tells image.ie.
“For food on the go you can’t beat the likes of a simple smoothie or overnight oats, or I have this chocolate hazelnut squares recipe too.”
Roz, who follows a plant-based diet, says the key to maintaining a healthy lifestyle is to slowly change your habits, rather than going in all guns blazing at the start. And never ever punish yourself for indulging in the foods you like.
“If you make a list of the end goals you would like to achieve by the end of the year, and then break it down into small sustainable things that you can change over time, you will keep it up. That’s the only way I’ve ever changed my habits,” she says.
“I don’t punish myself, I don’t feel guilty about it. I just go back to normal. I know it’s quite hard but it’s about being mindful, and a lot of the time it’s just habit.
“Batch cooking is important, but it’s not key. I don’t get to batch cook most weeks and I manage just fine. For anyone who is used to batch cooking, it definitely makes life easier but for those that are not used to meal prep you can still follow a balanced diet.
“Veggie meals can be made fast and easy with minimal ingredients that you can pick up on the way home from work each day, whipping up a dinner in 10 minutes. What’s important is having recipes ready – I like to keep screenshots on my phone – and having your press full of dried goods and tinned food and having your freezer packed.
“Take it slowly and maybe start by making a double batch on a Monday. Pick your favourite traditional meals that have been made vegan and this will really help you to enjoy the meals more.”
Roz’s mantra is based around enjoying the food you eat. “Remember you’re human and food shouldn’t make you feel guilty, so try not put too many boundaries on your meals, make sure you’re always enjoying your food.”
Her favourite food to make using the innocent dairy-free range is chocolate orange muffins. The dairy-free range contains hazelnut, almond, oat and coconut (Roz’s favourite) flavours, and all drinks have been made using just four or five natural ingredients.

Roz also acknowledges that attempting new recipes can be overwhelming at times, but slow and steady wins the race. “A really good thing to do when you want to get more into cooking and be more aware of what is going into your food is taking one recipe a week. By the end of a month, you will have four new recipes in your repertoire.”
