What To Cook: Spicy Prawn And Chorizo Lollipops

Spicy Prawn And Chorizo Lollipops

This is the perfect light treat for the midweek slump. Packed full of flavour and earthy spices, these prawn and chorizo?lollipops by A Fox In The Kitchen will give you the perfect kick to get you through the week.

serves 4-6

INGREDIENTS

16 raw tiger prawns, peeled

?16 slices of chorizo

1 clove of garlic

?2 red chillis, deseeded and chopped

60ml lime juice

60ml olive oil

?1 tbsp honey

1 tsp smoked paprika

?? tsp cayenne pepper

?salt & pepper

lime to serve

METHOD

1 To make the spicy smoked sauce, place everything except for the prawns and chorizo into a small food processor and blitz until you have a smooth paste. Halve the sauce and set one portion to the side.

2 Preheat a griddle pan, or BBQ if using, over a high heat. Wrap each prawn around a slice of chorizo and thread onto the skewer, do this twice for each skewer. Brush with the spicy smoked sauce and cook for about 3 minutes or until the prawns are cooked through.

3 Serve with some lime wedges and the extra portion of spicy smoked sauce for people to dip.
