Having IMAGE HQ in Dun Laoghaire has its perks. Generally you notice them when the weather picks up and you can start bringing your swimsuit to work, so as to take a quick dip in Seapoint on your way home. Another perk is sipping cocktails overlooking the pier, and there is no better place for it than in The Oliveto at The Kingston Hotel. We hit up their world-class mixologist Angie for some tips for a spring cocktail.

The Twisted Collins

50ml Tanqueray gin, juice of half a lemon, 4 raspberries, teaspoon of white sugar and soda water. Use a muddler, a long spoon, lemon juicer, toothpick and straws.

  1. Softly Muddle the raspberries
  2. Add sugar and mix
  3. Juice the lemon and add the gin
  4. Fill the glass with ice cubes
  5. Top with soda water
  6. Knocl back and think sunny thoughts
