So What Does Model And Healthy Eating Guru Roz Purcell Eat In A Day?

There’s nothing we love more than snooping in other people’s kitchens. This week bestselling author and model, Roz Purcell gave us a gawk inside her fridge and to our chagrin, she practices what she preaches, there are no skeletons in this fridge.


What is always in your shopping basket?

Oh that’s easy! Eggs!!! They are always a feature, organic of course.

What is your comfort food?

I have many, many comfort foods, I do love mashed potato. It’s really nostalgic for me, my dad makes the best! Sometimes if it’s a sweet comfort, porridge with my homemade Notella sauce. I’m actually salivating thinking about this !

What’s the ultimate hangover cure?

Honestly my homemade breakfast burrito – cures the worst of them!

If you could only pick three things to eat for the rest of your life, what would they be?

Eggs, rice and peanut butter.

What would your last meal on earth be?

Oh wow that is a horrible question, I want it all! But I think it would actually be my dad’s mash potato and Irish stew and my aunt Mary’s eclairs!

What do you typically eat in a day?

I usually start the day with water, at least 1/2 a litre before anything else.

Breakfast is usually an omelette with sweet potato, feta and some greens with a side of spicy nut butter or possibly homemade oat pancakes.

I snack a lot on things like boiled eggs and almond butter or homemade oat bread or berries.

Lunch is usually a massive salad with a nice mix of protein, fats and carbs with tonnes of leafy greens. I tend to opt for fish at lunch, like salmon and prawn salad with all the leafy greens, broccoli and some grains like quinoa mixed with a dollop of pesto.

Dinner is my favourite meal because I’m usually finished for the day and I can relax. It’s most likely a rice and cauli rice mix with stir fry chicken, asparagus and peanut butter curry.

Is there anything you don’t eat?

I’m pretty easy going, I don’t hate anything but, for example, I wouldn’t be pushed on oysters.
