Chilli & Garlic Spicy Hot Chicken Wings

Chilli & garlic spicy hot Chicken Wings, with homemade Cashel Blue Cheese sauce is well known guilty pleasure and how wonderful would it be if you could make it yourself at home? This recipe is by Clement Pavie, the head chef for Musgrave MarketPlace.

Ingredients:
Serves 4
Starter size – double everything for a main course

For the wings
?500g chicken wings
?100ml of chilli sriracha sauce
?100g of butter

For the blue cheese sauce
?2 tablespoons of mayonnaise
?1 tablespoon of cr’me fraiche
?100gr of Cashel blue cheese
?? table spoon of red wine vinegar
?1 tablespoon of freshly chopped chives

Method:

Blue cheese dressing
Step 1: Crumble the blue cheese into the mayonnaise
Step 2: Add in the cr’me fraiche and red wine vinegar
Step 3: Mix thoroughly, add in the chopped chives and season with salt & pepper

Chicken wings
Step 1: Clarify the butter and mix through with the chilli sriracha sauce
Step 2: Roast the chicken wings at 200?C for 15 to 20 minutes until crispy and golden
Step 3: When the wings are ready, toss them in the chilli sauce
Step 4: Serve piping hot with the blue cheese sauce and celery & carrot sticks for dipping
