With fresh citrus flavours and a welcome fizz, it’s effortless to put together and a real crowd-pleaser.

Making cocktails is the perfect way to mark the end of the week and set you up for the weekend, but making something refreshing and delicious doesn’t have to be complicated.

That’s why we asked world-class Irish mixologist and Diageo Head of Advocacy, Cal Byrne, for his go-to recipes to make at home. 

The perfect example of a drink that’s straightforward to put together but will impress your friends, the Don Paloma is a bright, grapefruit-flavoured choice that’s ideal for even the most casual after-work get-together. Think a margarita – but lighter, crisper, and with refreshing bubbles.

“Move over, margarita; it’s the season of the Paloma!” says Cal. “Currently, the number one trending cocktail worldwide, this simple yet delicious combo has taken the world by storm. A fresh and citrusy highball that is as easy to make as to drink is the perfect serve this summer at home or in your favourite bar.”

Super-refreshing, and with the fun of a touch of fizz, it’s a drink that doesn’t take itself too seriously. To express the laid-back yet cool spirit of the Don Paloma, Cal has paired it with an outfit that is equally nonchalant yet fresh. A black-and-white combo of a graphic t-shirt and a two-tone shirt, it’s just the kind of relaxed outfit that you’d wear to meet friends.

“I decided to pair this cocktail with a casual and cool look, reflecting the effortless beauty of this simple cocktail. Don Paloma

To make: 

  • 35ml Don Julio Blanco Tequila
  • 10ml Fresh lime
  • 100ml Grapefruit soda
  • Slice of pink grapefruit to garnish

 

Start by adding ice to a long glass, add your Don Julio Blanco, followed by the fresh lime juice. Finally, top with pink grapefruit soda, garnish and enjoy!
