The IMAGE Cocktail Club: Meghan’s summery Tequila Sunset
Get ready for a garden soirée with IMAGE staffer Meghan Killalea’s fun twist on the classic ombré cocktail, a Casamigos Tequila Sunset.
If vibrant, radiant and sweet are on your list of the best cocktail adjectives, then you and IMAGE team member Meghan Killalea will be fast friends. Kicking off summer with a signature cocktail evening, the IMAGE gang got together to sit and sip, with Meghan’s tipple of choice a moody twist on a Tequila Sunrise – a Tequila Sunset.
“As someone who has never particularly been a fan of bitter drinks (anything made using tonic water is an absolute no-go in my books), sweet, delicious cocktails have always been what I gravitate towards,” she explains. A deep ombré, the addition of the blackberry-infused creme de cassis is the difference, giving it a moody appearance, the layers of grapefruit and orange juice like the sun sinking below a darkened berry-stained sea.
“No matter if I’m sitting in my back garden, one sip and I think of trips to the Amalfi Coast, perched on a terrace bar overlooking the Mediterranean, a pleasant evening breeze rolling in,” says Meghan. Made with vibrant Casamigos Blanco Tequila and paired with orange juice, grapefruit juice and a dash of blackberry cordial to give it its sweet edge, this drink is the perfect addition to any summer soirée.
A beautiful fading sunset effect, it’s an incredibly simple drink to put together, so choose fresh ingredients where possible, advises Meghan, and chill your glass ahead of time. “The trick is to layer your ingredients on top of each other,” she says. “I always pour everything onto the back of a spoon rather than directly into the glass for that tiered effect, adding the creme de cassis in last so it sinks gently to the bottom.”
You can also substitute the creme de cassis for blackberry cordial if you fancy something lighter. “Just remind your guests to stir it once it’s served, otherwise they’ll get a mouthful of blackberry!” reminds Meghan. And don’t forget the final flourish of a blackberry on top with a sprig of fresh mint.

Casamigos Blanco Tequila Sunset
Ingredients
- Casamigos Blanco Tequila – 35.5ml
- Fresh grapefruit juice – 40ml
- Fresh orange juice – 40ml
- Creme de cassis or blackberry cordial – 15ml
- 1 blackberry, to garnish
Method
- Add Casamigos Blanco, orange juice and grapefruit juice into a glass over ice and gently stir.
- Float cassis in with the drink and serve.
- Garnish with a fresh blackberry.
