#WhatIEat: The Little Green Spoon’s Indy Power

Welcome to #WhatIEat, our foodie spying series that asks some pretty cool people, whose lifestyles we’re very jealous of, about their actual eating habits.

First up we got a behind-the-scenes guide to a working week with Susan Jane White, and today we’re catching up with Indy Power, our resident food blogger and the one woman operation behind The Little Green Spoon, one of Ireland’s most popular health food blogs.

A mere 22-years-old, Indy Power has just finished business in Trinity College Dublin. In the past few years she balanced her studies with starting a blog,?The Little Green Spoon, which is devoted to nourishing, nutritious recipes free from gluten and refined sugar. She’s the go-to bookmark for curious Irish kitchens looking for gluten free, dairy free, vegan and paleo recipes and is currently working on her first cookbook which will be out in 2016.

Here’s a day in her foodie life.

Breakfast:?Green tea and bircher muesli made with almond milk, fresh apple, coconut, oats and chia seeds topped raspberries and seeds.

Do you have a fitness regime??I go to the gym 4-5 times a week. I always go first thing in the morning and it makes me feel so much better for the rest of the day. I also really like yoga, I hope to start doing more of it.

Lunch:?Two poached eggs on a bed of rocket with smoked salmon and avocado. If I don’t have eggs for breakfast I always end up having them for lunch!

Your absolute favourite meal ever??Sushi at Hamasaku in LA. It’s out of this world good, I would fly over just to have dinner there.

Dinner:?Spicy grilled salmon with lemon roasted asparagus and quinoa.

Your guilty food pleasure??Anything with dark chocolate and salt, I’m obsessed.

What is your go to snack??My favourite snacks are protein balls. I make them in loads of different flavours and they’re so delicious! They’re also really handy on the go.
