Cocktail Club: Whip up Hawksmoor’s New Cork Sour at home this weekend

Looking to flex your cocktail-making skills this weekend? The New Cork Sour, close cousin of the New York Sour, is sure to impress.

Hawksmoor’s New Cork Sour 

Recipe from Liam Davy, Hawksmoor Head of Bars 

The New Cork Sour is a very close cousin of the New York Sour (a kind of bourbon sour with a red wine float). We loved the idea of a slightly fruity whiskey sour but found the original a little hard to drink with its sweet, spicy American whiskey and the tannic red wine that sat on top.

For our version, we decided to use the lighter, smoother style of Irish Whiskey found in Powers Gold (a wonderful whiskey to mix with) and instead of just popping straight-up wine on there we decided to use a really light fruity style (the low tannin Gamay) and add some cherry flavour to give it a more appealing overall taste. A splash of tangy lemon sherbet and slightly funky raspberry vinegar add a real depth to the cocktail.  

Ingredients

  • 50ml Powers Gold
  • 20ml Lemon Juice
  • 15ml Cherry Red Wine Cordial
  • 2.5ml Lazzaroni Amaretto
  • 2.5ml Raspberry Vinegar
  • 20ml Egg White

 

To make the cherry wine cordial

  • 100ml Cherry Juice (Biona or Rabenhorst)
  • 100ml Light Red Wine
  • 100ml Green Tea
  • 300g Caster Sugar

 

To make the lemon sherbet

  • juice and zest of 2 lemons mixed with 10og caster sugar


Method

  1. Add all ingredients to the shaker, shake with cubed ice and strain into a coupette or martini glass
  2. Garnish: We use freeze-dried raspberry powder to garnish, but a cherry with a stem would also be nice
