Super Supper Bowl

This makes a divine dinner or gorgeous lunch.det’s like a fancy tuna salad packed full of nutritious goodies. It’s fresh, flavourful and packed full of energy, protein and good fats!

Ingredients (Serves 2)

1 Cup of Cooked Quinoa (Cooked in Chicken or Veg Stock)

150g of Tinned Tuna

2 Eggs

2 Handfuls of Alfalfa Sprouts

1 Avocado

Olive Oil

Half Lemon

Method

Step 1: Start by hard boiling your eggs.

Step 2: Divide your hot quinoa between two bowls. Add your tuna in on top, then a generous handful of alfalfa sprouts.

Step 3: When the eggs are boiled to your liking, peel and chop them and add them in on top of the sprouts. Top each with half an avocado.

Step 4: Drizzle with olive oil and a squeeze of lemon juice and season with salt and pepper.
