While she had a business background, Katie Cantwell also had a deep love of food. Originally from Seattle, when work took her to Dublin in 2003, she saw a real need for healthy fast food in the city. Despite the challenges of dealing with cultural differences and moving from a corporate business world, not to mention recessionary times, her company, KC Peaches, is thriving, having recently opened at a third location on Dublin’s Dame Street, with plans for a fourth also afoot. Business is booming. ?We’re really lucky to be in the sector of fast casual [restaurants], which, I would say, was impacted in a more positive way by the recession,? she says. ?Our average transaction is below €10, and that has helped us get a better following.?
