Fridge Tour: What Does A Healthy Eating Guru Eat In A Day

We are always dying to hear what other people are eating – sure it may be a new level of nosiness but we can’t help it, a snoop inside someone else’s fridge is always fascinating.?


We caught up with Erica Sheehan of Homespun Foods (you, like us, may already be completely obsessed with her divine Quinoa Crunch granola) to find out what she loves, loathes and can’t live without.

What is always in your shopping basket?

The basis of any shop is always loads of veggies, berries, good hummus, fresh pesto, plain yoghurt, smoked salmon, spinach, eggs and goat’s cheese. If I’m in Supervalu, I love shopping the Food Academy section and picking up artisan food made by local producers.

What is your comfort food?

Anything spicy. My homemade veggie curry – which is actually pretty healthy – always hits the spot.

What’s your tipple?

In nice weather like this, a delicious chilled Ros??.

What’s the ultimate hangover cure?

Hangovers happen less frequently now we have a toddler in the house who is up with the larks. But if I’m feeling any after effects, shakshuka with feta cheese, coffee and a walk on Dun Laoghaire Pier does the trick.

?If you could only pick three things to eat for the rest of your life, what would they be?

This limitation would clearly only arise in an Armageddon-style scenario, where the end may well be nigh, so I’d throw caution to the wind and pick cheese fondue, proper French fries, and my mother’s florentines.

?What would your last meal on earth be?

One someone else makes for me! The hot and cold seafood selection with a green salad washed down with a glass of Sauvignon Blanc, in O?Neills The Point Seafood Bar in Renard, Kerry.

What do you typically eat in a day?

For breakfast, I usually make almond and buckwheat porridge, topped with my Goji berry, Cashew, and Coconut Quinoa Crunch. It tastes divine, is full of seeds and goodness and really keeps me going for hours. Daytime I’ll grab a salad somewhere healthy like Sprout. For dinner mid-week, an easy healthy favorite is baked salmon (I like to marinade it in ginger, lime, and tamari) with sweet potato and broccoli.

Is there anything you don’t eat?

My diet is mainly plant-based, so I tend not to eat meat. Other than that, I’ll eat anything once it’s real food. Try and stop me!
