You won’t want to miss this incredible Sake Tasting Dinner with five courses at WILDE

Ireland’s first Sake Tasting Dinner will be hosted by Sake Master Honami Matsumoto who, along with the Westbury’s Head Sommelier Philip Dunne and WILDE’s Head Chef Sandeep Singh, will guide guests through five exquisite courses paired with KEIGETSU sake.


Can’t quite make it to Japan for the Rugby World Cup? Don’t worry, because WILDE restaurant at The Westbury Hotel is bringing Japan to you, with Ireland’s first Sake Tasting Dinner.

This exquisite offering – for one night only – will see Sake Master Honami Matsumoto collaborate with WILDE Head Chef Sandeep Singh and The Westbury’s Head Sommelier Philip Dunne for a five-course tasting meal.

Taking place on October 9, a significant date for sake in the Japanese calendar as this is the month when the rice is harvested and placed in special jars for the fermentation process to begin, guests are in for a rare mouth-watering treat as they sample five-star dishes and learn of the complexity of the Japanese national beverage.

Guests will be welcomed with a sparkling sake paired with a trio of canapés, Tempura Carlingford Lough Oyster, Thornhill Duck Breast and Beef Fillet “Tartar”. The tasting will then feature a sake-glazed salmon accompanied by compressed cucumber, mirin pickle and wasabi sour cream, followed by a Wild Atlantic turbot with leek purée, caramelised endive, silken tofu, clam and mussel velouté.

It will culminate with John Stone rib eye steak with celeriac and shallot and baby watercress dressed with miso BBQ. Dinner will finish with a white chocolate & yuzu bavarois, blackberry and black sesame seed crumb. Sounds positively scrumptious!

The evening will be hosted by Sake Master and educator Matsumoto, who is the founder of House of Sake, and Chief Ambassador of KEIGETSU by Tosa Brewing Company, which is imported to Ireland by Liberty Wines.

Regulars to WILDE will know the beautiful terrace will only complement this unique experience.

Head Sommelier Dunne says: ‘The love for sake has traditionally been so strong that in 1978, the Japanese government designated the 1st of October as International Sake Day. This year we are delighted to join the celebrations with this special one-night event in WILDE.’

This sake tasting is part of the wider and ambitious wine programme that Philip Dunne has continued at The Westbury. He curates every aspect of the wine offering in WILDE: from the designing of the restaurant’s wine list, which has been awarded with the Certificate of Excellence by the Wine Spectator Awards and the Special Jury Prize by the World of Fine Wine Awards in 2019, to the exclusive wine dinners in collaboration with renowned Napa Valley Opus One and these are set to continue into 2020.

The Sake Tasting Dinner will take place in WILDE on Wednesday, October 9, with drink reception at 6.30pm and dinner sit down at 7pm. A limited amount of tickets are available, priced at €70 per person.
