Paleo Sun Dried Tomato & Basil Bread

Who says you can’t have bread when you’re trying to eat well? This bread is the perfect way to satisfy those diet sabotaging bread cravings! It’s healthy, full of flavour, gluten free, dairy free, and paleo- need I say more?

Ingredients

5 Eggs

1/4 Cup of Coconut Oil, Melted

1 Tablespoon of Tomato Paste

Handful of Fresh Basil

3 Cups of Ground Almonds

1 Teaspoon of Baking Powder

1 Teaspoon of Coarse Salt

100g of Sun Dried Tomatoes

Method

Step 1: To start, finely chop the basil and roughly chop the sun dried tomatoes into little chunks.

Step2: In a large bowl combine the eggs and the melted coconut oil. Then whisk in the tomato paste (use an electric mixer on high speed to really break up the tomato paste!).

Step 3: Add in the basil and mix to combine.

Step4: In a separate bowl, combine the ground almonds, baking powder and salt.

Step 5: Add the almond mixture into the egg mixture and mix until well combined and then fold in the sun dried tomatoes.

Step 6: Bake at 180’C for about 40 minutes. Let it cool on a wire rack before slicing and serving.?This recipe is Gluten Free, Dairy Free & Paleo.
