Christmas is the perfect time to wrap your senses in luxury, and what better way than in front of a roaring fire at one of Dublin’s most luxurious city-centre hotel retreats, The Marker, with a glass of Bollinger champagne.
From now until January 6th, guests can experience the 12 Days Of Christmas Menu at the Marker’s rooftop and groundfloor bars to ensure the festivities continue right through to January.
The concept was born through combining food and beverage with the famous “12 days of Christmas” Christmas Carol. People can overlook Dublin city on The Marker rooftop while snuggling into Bollinger blankets and cushions for the ultimate cosy festive feeling.
With the 12 Days Of Christmas menu, pair your glass of Bollinger Cuvée have partridge, rabbit, duck and, of course, turkey. Or try a festive tasting board with friends. Keeping in tune with the 12 Days Of Christmas theme, dishes include ‘Two Turtle Doves’ which includes a glass of Bollinger special cuvée, smoked salmon & cheese straws for €24 and ‘Six Geese A Laying’, which includes duck spring rolls, star anise and orange for €12.

Speaking about the menu Gareth Mullins, Executive Chef, Marker Hotel, said, “We were eager to have a good concept for our Rooftop and Bar for Christmas so we used the 12 days of Christmas song for our inspiration as it has a lot of nods to food within the lyrics. There are amazing food synergies to work with and it’s a great opportunity to showcase game which is perfect for this time of year. The Bollinger partnership takes it to another exciting level as champagne and Christmas go hand in hand!”
