Banana Oat Pancakes & Un-Nutella
This yummy scrummy dish will have your kids fighting over the last bite. The oats in these pancakes are filled with fibre and the bananas are rich in potassium. The cottage cheese is loaded with protein and calcium, making this a delicious and perfectly balanced first meal of the day. Better yet, they are so easy to make!
For the pancakes
coconut oil for cooking
200g gluten-free rolled oats (you can also use whole oats, but keep in mind these contain gluten)
100g cottage cheese
Un-Nutella (see below), cinnamon, banana, or berries for garnish
For the Un-Nutella
75ml coconut milk (full cream)
80ml maple syrup
1 tsp vanilla bean paste
2 tbsp raw cacao powder
To make the Un-Nutella, preheat oven to 180°C/gas mark 4. Place hazelnuts on a lined baking tray and roast for approximately 10-12 minutes. Be careful not to burn them! Let the hazelnuts cool completely, then rub away their skins with a paper towel.
In a food processor, blend hazelnuts until they become a nut butter. Add remaining ingredients to the food processor and blend until smooth.
To make the pancakes, blend the ingredients in a food processor. Heat a nonstick pan at medium heat, then add coconut oil to the pan. Pour ingredient mixture into the heated pan in 60ml measurements (about ¼ cup). Cook until you see little bubbles that stay popped (roughly 2-3 minutes per side).
Serve with Un-Nutella, a sprinkle of cinnamon, banana slices, or fresh berries.
